Ahh stuffing. Alongside the turkey and mashed potatoes, you really can’t have Thanksgiving with it – well, maybe you can, but we would never want to! It’s a once-a-year treat, and we don’t want to miss out on it just because our guilty conscious says it’s not healthy! That’s why we created this Healthified Thanksgiving Stuffing. It’s so full of veggies and fresh herbs and totally free of the stuff that makes you feel like a stuffed turkey at the end of the day. Don’t get us wrong, you are welcome to stuff yourself silly – it’s Thanksgiving after all! We are just helping you make healthy choices where you can, so you can indulge in the other good stuff!

 

Here’s what you’ll need:

2 medium sweet potatoes

1 medium head cauliflower

5 stalks celery

1 yellow onion

10 oz baby bella mushrooms

2 cup vegetable broth

3 eggs

1 1/2 Tbs fresh rosemary

1 1/2 Tbs fresh thyme

1 tsp sea salt

1/4 tsp pepper

 

Directions:

  1. Roughly chop sweet potatoes, cauliflower, celery, onion, and mushrooms
  2. Whisk together eggs with chopped fresh herbs, vegetable broth, and salt and pepper
  3. Throw everything in crockpot and cover
  4. Place a double layer of paper towels between the cover and stuffing to collect moisture
  5. Cook on high for two hours
  6. Remove cover and cook for another two hours
