Weather it’s taco Tuesday, or meal prep Sunday this Chipotle Chicken will do the trick! Let’s face it, meal prepping can get super boring and monotonous. That’s why we are always trying new things. It is loaded with protein and flavor, and this batch will make you 8 servings, so you’ll be set for the whole week.

 

Here’s what you’ll need:

2 lb boneless skinless chicken breast
7.5 oz can chipotle peppers in adobo sauce
1 large red bell pepper
1 tsp garlic powder
1 tsp salt
optional: 1/2 tsp cayenne pepper

 

Directions:

  1. In a crock-pot add chicken breasts, peppers, and spices – If you like spicy food, add 1/2 tsp cayenne pepper
  2. Cook on low heat for about 4 hours
  3. Once chicken is cooked, shred with two forks
