This Coconut Cranberry Baked Oatmeal is great for those meal-prepped breakfasts we are always reaching for. It’s full of whole grains, fiber, and healthy fats that sustain us through the morning – this, and coffee, of course (;
Here’s what you’ll need:
3 cups rolled oats
1 can coconut milk (full fat)
1 cup water
2 Tbs chia seeds
2 eggs
1/2 cup coconut flakes
1/2 cup dried cranberries
1/2 tsp salt
1/2 cup Stevia bakeable blend
Directions:
- Preheat oven to 350F
- Whisk together eggs
- Add coconut milk and water to eggs
- Mix together oats, chia seeds, coconut flakes, cranberries, stevia, and salt
- Combine the two mixtures
- Place mixture in an 8 x 11.5 greased pan
- Bake for 40-45 minutes
