Our mornings are chaos, and our days can be super long. Because of this, we like breakfasts that are either quick, on-the-go, or already prepped for us. This Coconut Cranberry Baked Oatmeal is great for those meal-prepped breakfasts we are always reaching for. It’s full of whole grains, fiber, and healthy fats that sustain us through the morning – this, and coffee, of course (;

 

Here’s what you’ll need:

3 cups rolled oats

1 can coconut milk (full fat)

1 cup water

2 Tbs chia seeds

2 eggs

1/2 cup coconut flakes

1/2 cup dried cranberries

1/2 tsp salt

1/2 cup Stevia bakeable blend

 

Directions:

  1. Preheat oven to 350F
  2. Whisk together eggs
  3. Add coconut milk and water to eggs
  4. Mix together oats, chia seeds, coconut flakes, cranberries, stevia, and salt
  5. Combine the two mixtures
  6. Place mixture in an 8 x 11.5 greased pan
  7. Bake for 40-45 minutes
