Say “no” to boring chicken. We are usually stuck prepping the same shredded chicken and eating the same dang meals every.single.day. We recipe test all of the time, but we always have our staples prepped. But let’s be honest, that can get mind-numbingly boring. That’s why we are trying something new, and we think you should too! Try this Cranberry Feta Stuffed Chicken as this week’s protein.

 

Here’s what you’ll need:

2 large chicken breasts

1 cup spinach

1/2 cup feta cheese

4 Tbs dried cranberries

 

Directions:

  1. Preheat your oven to 350F
  2. Butterfly your chicken breasts by cutting them in half, so they are nice and thin
  3. Tenderize your chicken by pounding on it with a meat tenderizer, so it is nice and thin
  4. Stuff each chicken breast with about a fourth of each ingredient – depending on the size or each peice, you may need a little more or a little less
  5. Roll the chicken breast tightly and place a toothpick on each end to hold in place
  6. Bake for about 45 minutes, or until the internal temperature of your chicken is 165F
