After all, one of my favorite ways to dig into this recipe is as a vegetable dip. Inspired by the nearly full jar of tahini stashed away in my refrigerator, I was anxious to create something special. Tahini is such a powerful ingredient because it packs a rich nutty flavor into every dish.  Lemon juice provides the perfect punch and zest to cut through this salty, savory dressing.

2 tbsp tahini
¼ cup ricotta
½ lemon, juice
½ tsp garlic powder
2 tbsp olive oil
