The 4th of July brings us all together, and although we all celebrate a little differently, one thing we know is for certain: there will be food! And likely, there will be a lot of unhealthy junk food. That’s where we come in. We have a clean, healthy and delicious recipe that is a major crowd-pleaser. Opt for this dessert that is both appropriate for the holiday and appropriate for your health… even if it is the only healthy thing you eat all day (;

Ingredients:

Crust:

1/3 cup almonds
1/3 cup cashews
1/3 cup pecans
1/4 cup coconut flakes
1/2 tsp cinnamon
5 medjool dates

Frosting:

1 1/3 cup plain Greek yogurt
1/2 tsp cinnamon
1/4 cardamom
1.5 Tbs honey
Toppings
1/2 cup blueberries
1 1/2 cup strawberries
3/4 coconut flakes

 

Directions:

  1. Blend crust ingredients together in a blender or food processor
  2. Press into the bottom of an 8×11.5 inch pan
  3. Mix frosting ingredients together
  4. Spread over the top of your crust
  5. Decorate your cake with your toppings, and enjoy!
