One of the toughest things to do when we are eating clean is combat cravings. Our sweet tooth always takes over – especially at night. We have gotten quite creative recently. Partly because we want to stick to our clean eating commitment, but also because when that sweet tooth hits, we don’t even have anything in the kitchen to give us that fix we’re looking for! Last week we came up with these Stuffed Sweet Potatoes using our fresh Homemade Farmer’s Cheese. This recipe is super simple, and we whipped it up in about five minutes!
Here’s what you’ll need:
2 large sweet potatoes
1/2 cup farmer’s cheese (use our recipe, buy your own, or replace it with ricotta or goat cheese)
2 cup blackberries
1/2 tsp stevia
Directions:
- Stab sweet potatoes with fork multiple times
- Microwave for about 5-6 minutes, or until they are soft, turning halfway through
- In the meantime, place blackberries and stevia in a small saucepan over medium heat
- Stir and smash berries until they reach a sauce-consistency – about four minutes
- Slice open sweet potatoes – be careful if they’re still hot! – and mash the insides with a fork
- Stuff with cheese and top off with compote
