Go ahead and hit the snooze one more time with this new recipe!

It’s great for those mornings when you just don’t want to get out of bed (aka any day that ends in a “y”). These muffins are super simple to make, and you can just throw them in the microwave for ten seconds, and run out the door! They are loaded with protein, delicious, and you can eat them on-the-go.

 

Here’s what you’ll need:

6 eggs

3.5 oz fat free feta cheese

1 small tomato

1 cup spinach

salt and pepper to taste

 

Directions:

  1. Preheat your oven to 350F
  2. Whisk eggs together
  3. Chop tomatoes and spinach
  4. Mix remaining ingredients into eggs
  5. Pour eggs into a greased muffin tray about 3/4 full – this makes about 8 regular muffins, or 12 mini-muffins
  6. Bake for about 25 minutes if using the regular muffin tray, mini muffin trays require about 15 minutes
