Hold onto your hats, folks because these are some crazy good Pumpkin Protein Muffins that you have to try! I know you’re feeling that pumpkin spice fever, so here is a healthy way to get your fix!

 

Here’s What You’ll Need:

12 oz pumpkin puree (because the other 3 oz of the can have been used in our Pumpkin Spice Chai Latte)
2 eggs
1 cup almond flour
2 scoops vanilla
2 tsp cinnamon
1/2 tsp nutmeg
2 Tbs stevia
2 Tbs coconut oil
1 tsp baking powder
1 tsp baking soda
Pinch of salt

 

Directions:

  1. Preheat oven to 375
  2. Line or spray muffin tin
  3. Combine dry ingredients in a bowl
  4. Mix wet ingredients in a separate bowl
  5. Combine the two bowls
  6. Pour batter into twelve muffin molds
  7. Bake for 25-30 minutes
