okay, maybe it’s a little early to declare it summertime, but it’s a warm sunshiney day, so we can’t help ourselves! Here in MN, we can’t help ourselves but run around in shorts and drive around with our windows down as soon as we get a remotely warm day! And we can’t help but get inspired to create fresh and summery recipes like this Key Lime Panna Cotta with fresh Mango Puree. Give it a go!
Here’s what you’ll need:
1 cup almond milk
1 package of gelatine
1 tbs honey
Juice of one lime
2 mango pureed
2 cup Greek yogurt
Directions:
- Heat almond milk to a boil
- Reduce heat and add gelatine
- Stir until dissolved
- Remove from heat and stir in Greek yogurt, honey, and lime juice
- Fill bottom of cups with mango puree
- Fill remaining with the Greek yogurt mixture
- Top it off with any leftover mango or lime slices
- Allow to set in refrigerator for a couple hours
