These Curry Veggie Burgers are a new twist on veggie burgers. Loaded with flavor and real, whole food ingredients, you don't want to miss this recipe!

I have recently been incorporating more plant-based meals into my lifestyle. I do this by going completely vegetarian, sometimes vegan, at least one day per week and limiting any meat consumption to one meal per day on the days I do eat meat. This has inspired me to be a little more creative with my meals (no more chicken, rice, and veggies for meal prep!). These Curry Veggie Burgers are my most recent experiment!

 

Here’s what you’ll need…

1 can garbanzo beans

1 medium sweet potato, cooked and skin removed (simply bake in the microwave until soft)

1/4 cup red onion, diced

1 clove minced garlic

1 Tbs curry powder

1/2 tsp Garam masala

1/4 tsp cayenne pepper (optional)

 

Directions:

  1. Preheat oven to 375F
  2. Mash all ingredients together
  3. Form into four patties
  4. Bake on baking sheet lined with parchment paper for 25 minutes
