Looking for a Meatless Monday recipe? You’re in luck! This Stuffed Sweet Potato is perfect. It’s filling and full of flavor. We enjoyed it as a pre-workout meal because it’s full of body-fueling carbohydrates and a little bit of protein. An added benefit is that it only takes about 5 minutes to make.

 

Here’s what you’ll need:

1 large sweet potato

1 oz feta crumbles

2 Tbs dried cranberries

1/4 cup shredded brussel sprouts

5 grilled or steamed asparagus stalks

 

Directions:

  1. Cook sweet potato in microwave for 4-5 minutes – be sure to poke holes in it, so the steam can escape
  2. Slice in half and stuff away!
