I used to eat a lot of pre-packaged granola bars. They were quick and convenient, and I could snack on them or use them as a sweet treat, but I had no idea what I was missing out on until I started making my own. I love homemade granola bars, and I love adding different nut butters and mix-ins. I mean, I LOVE it. These Loaded Granola Bars have some of my favorites – cashews, pepitas, dried cranberries, nut butter.. If I am being totally honest… I will take just about any excuse to eat nut butter. Without further ado…
Here’s what you’ll need…
1 cup cashews
6 large dates
1/2 cup pepitas
1 cup dried cranberries
1/4 cup honey
1 cup peanut butter
1 cup rolled oats
Directions:
- Add cashews and dates to food processor and pulse until pieces are no larger than pea sized
- Combine remaining ingredients and mix together thoroughly
- Spread onto a baking sheet lined with parchment and spread and press the dough until it reaches 1/4 inch thickness
- Bake for 15-17 minutes
- Cut into 12 bars
