This recipe was born completely by accident! I ran out of peanut butter... but I am SO glad I did!

You’ve tried peanut sauce, right?! Well, I love it, but the day I developed this recipe, I was OUT OF PEANUT BUTTER. Likely because my foster dogs eat it by the spoonful… and me… I eat it by the spoonful. SOOO the Spicy Almond Butter Chicken was born! Sauces are my thing. It’s incredible how much they can transform simple ingredients into something truly spectacular.

 

Here’s what you’ll need…

2 lb chicken breast

 

Sauce:

3/4 cup almond butter

3 tbsp honey fermented garlic

3 tbsp soy sauce

4 tsp sriracha

 

Wraps:

1 head romaine lettuce

¼ cup shredded carrots

Handful of peanuts

 

Directions:

  1. Cook chicken in pressure cooker for 35-40 minutes
  2. Shred with two forks
  3. Combine sauce ingredients and mix until homogeneous
  4. Toss shredded chicken in sauce until evenly coated
  5. Assemble lettuce wraps by placing ¼ cup chicken in each romaine leaf, topping with carrots and peanuts
