That’s how you transform something simple and nourishing to something that’s also wildly delicious. This Oatmeal with Blueberry Compote and Almonds is exactly that, a simple transformation of something bland to something complex in flavor and texture.
Rolled oats will keep you fueled throughout your morning while slivered almonds provide healthy fats and a little bit of protein to keep you satisfied. This delicious blueberry compote is sweet and full of micronutrients! This meal has it all!
Ingredients
1 cup rolled oats
2 1/2 cup water or mylk substitute
2 1/2 cup blueberries, fresh or frozen
1/2 cup slivered almonds
1/4 cup water
2 tbsp maple syrup, plus more to taste
Directions:
- Combine oats and 2 1/2 cup water in a medium saucepan and cook according to package directions.
- In a small saucepan, add 2 cups of blueberries, maple syrup, and 1/4 cup water and bring to a steady simmer over medium low heat. Stirring occasionally to burst open the blueberries and prevent any sticking to the bottom, allow blueberries to cook down for 10-15 minutes, or until thick and sticky mixture forms.
- Once oatmeal is cooked and blueberries form a sticky compote, portion into bowls and top with almonds, blueberry compote, remaining blueberries, and additional maple syrup to taste. Enjoy warm.
- note: if prepping, reheat with an additional splash of mylk or water to maintain a creamy texture
