
My kitchen is full of random accessories and appliances – I guess that’s a perk of being a Food Engineer and recipe developer! I love experimenting with different flavor combinations, and when it’s shaped like a donut, it’s gotta be good, right?! Well, this time I tried to recreate one of the most nostalgic flavor combos… PB & J. I still love it just as much as I did when I was little. These PB & J donuts are great for breakfast meal-prep, weekend brunch, or a midday snack.
Here’s what you’ll need…
Donut base
1 cup almond flour
1/2 cup tapioca starch
1/2 cup maple syrup
1 cup peanut butter of choice
1 egg
Jelly Base
2 cup strawberries
1 Tbs chia seeds
2 Tbs maple syrup
1 tsp stevia
Directions:
- Preheat oven to 350 degrees
- Combine donut base until smooth batter forms
- Pour into a greased donut pan – you can also use a muffin tin
- Bake for 10-12 minutes
- For the jelly base, combine all ingredients in a small saucepan over medium heat
- Simmer and allow this to reduce for about 5-7 minutes, or until chia seeds expands, and the mixture thickens slightly
- Frost your donuts, and enjoy!
