Attention all pumpkin spice lovers!

Check out this Pumpkin Chia Pudding! As the leaves begin to change colors, we understand that it would truly be a shame to not buy the pumpkin puree that is taunting us in our neighborhood Trader Joe’s. That being said, we can only make so many Pumpkin Spice Latte‘s before we start looking for a new way to enjoy this seasonal delight! That’s why we created this Pumpkin Chia Pudding. It’s great for a snack, breakfast or those late night cravings.

 

Here’s what you’ll need:

1/4 cup chia seeds
1 cup milk (almond, coconut, or skim)
1/4 cup pumpkin puree
1 Tbs maple syrup
1/2 tsp pumpkin pie seasoning

 

Directions:

  1. Combine ingredients and refrigerate covered for about four hours, or overnight
