We love apple pie. It’s great for just about every holiday and most special occasions. We are lucky because our parents have a small organic apple orchard, and we enjoy a multitude of heirloom apple varieties every fall. We love eating them in every which way, but this Apple Crumble Pie is the best way to enjoy it the next time you need a clean and delicious dessert. We promise whoever you’re lucky enough to share this with will never know it’s healthy (;

 

Here’s what you’ll need:

 

Crust

3/4 cup oatmeal

3/4 dried cranberries

1 cup roasted & salted cashews

1 tsp coconut oil

 

Filling

7 apples (peeled and diced)

1 1/2 tsp cinnamon

4 Tbs maple syrup

1/4 tsp nutmeg

 

Crumble

1/2 cup oatmeal

1/4 cup almond flour

1/2 Tbs coconut oil

1 Tbs maple syrup

1/4 cup cashews chopped

 

Directions:

  1. Pulse crust ingredients in a food processor until finely chopped
  2. Press crust into a pie tin
  3. Combine filling ingredients in a saucepan
  4. Cook filling covered on low heat for about 20 minutes – or until they are nice and soft
  5. Combine crumble ingredients in a bowl
  6. Toast on medium high heat in frying pan until golden brown
  7. Add filling to pie tin with crust and top with the toasted crumble.
