We LOVE sweet potatoes. We use them in so many different ways – sweet and in brownies and pancakes or savory as hash browns and NACHOS! Give These Sweet Potato Nachos a try as a nutrient-rich way to enjoy what is normally a greasy guilty-pleasure.

Here’s what you’ll need:

1 large sweet potato thinly sliced
1 Tbs olive oil
1/4 cup of shredded cheese
4 oz ground turkey meat (seasoned with our taco seasoning)
1/2 cup black beans
1/4 cup black olives
2 green onions
1 jalapeño (optional)
2 Tbs fresh pico
Salt and pepper to taste

Directions:

  1. Preheat oven to 400F
  2. Place sliced sweet potatoes in oven for 15 minutes with olive oil
  3. After the sweet potatoes are done, load them up with the remaining toppings – and anything else you’d like
  4. Place back into oven until cheese is melted and toppings are hot
