If you follow me on Instagram (if you don’t, go give me a follow here!), you’ve probably seen my addiction to watermelon. I am eating about half a watermelon a day right now, and I am loving it. Although I love to eat this stuff just by itself, I also love to get a little creative with my obsessions to make something different. This Watermelon Salad is loaded with a few fresh ingredients to create something simple and unique.

 

Here’s what you’ll need…

1/2 large watermelon

1 large cucumber

1/2 lime, juiced

1/2 tsp lime zest

0.25 oz fresh mint

2 oz crumbled goat cheese

 

Directions:

  1. Cut watermelon and cucumber into small, bite-sized cubes
  2. Finely chop fresh mint leaves
  3. Combine all ingredients and gently toss
