There are a few things I miss in the winter more than fresh, bright, and vibrant flavors. That’s why I love this Winter Citrus Salad! It’s everything winter takes away, colorful foods, juicy fruit, and crisp, nourishing salads. It’s ridiculously simple to make and incredibly delicious.
Mandarin oranges and grapefruit provide gorgeous bursts of freshness in every bite, and they are balanced by creamy and smooth avocados, and crisp bites of baby arugula. A simple drizzle of olive oil and pinch of salt acts as a dressing to finish off this simple salad. It’s a beautiful start to any meal, or add your favorite protein like grilled salmon or chicken breasts to make a full meal! Brighten up your day with this this simple salad, and it may make it into your winter rotation!

Here’s what you’ll need:
12 oz baby arugula
2 small Mandarin oranges
1 grapefruit
1 avocado
3 tbsp olive oil
pinch of salt
Directions:
- Prepare citrus by cutting off each end and carefully slicing off the peel. Try to remove as much of the white fibrous peel as you can while saving as much of the fruit as possible.
- Once peel is removed, carefully slice out each wedge using their membranes as a guide to cut along.
- Slice avocado in half and remove stone. Remove skin and slice avocado into even and thin wedges
- Gently toss citrus, avocado slices, arugula, and oil together, add a pinch of salt and enjoy right away!
- Note: due to the perishable nature of these ingredients, I recommend enjoying this Winter Citrus Salad immediately!
