
I have said this before, and I will say this again: I HATE soggy zoodles. That’s why this Zucchini Caprese Salad is RAW! It’s full of fresh, crisp zucchini and not a single soggy zoodle. There’s no reason this simple dish won’t be this salad of the summer! It’s a breeze to make, and even easier to eat because it’s full of seasonal favorites like fresh basil and bright cherry tomatoes.
Here’s what you’ll need…
2 large zucchini, spiralized
1/2 cherry tomatoes, halved
1 oz fresh basil, chopped finely
2 tbs olive oil
1/2 cup fresh mozzarella balls
A pinch of salt – added right before consumption
Directions:
- Gently toss all ingredients together in a large bowl
- Right before you’re ready to enjoy, sprinkle a pinch of sea salt. You don’t want to let your zoodles sit in salt, or you’ll be eating soggy raw zoodles!
