I have been experimenting with my meals to incorporate vegetables as the star of each meal rather than meat or protein, and I am loving it. Getting creative with side dishes really helps round out a nourishing and satisfying meal.

I wanted to experiment with cabbage for a few reasons:

  1. It’s super affordable!
  2. It’s so often overlooked or ignored.
  3. It can be found in my grocery stores virtually all year round.
  4. It’s quite mild in flavor, making it a great vehicle for whatever sauce, glaze, or spice rub it takes on.

I wanted to take on the challenge of this super ordinary, lame vegetable and make it into something truly special. We don’t actually have to hate veggies as we eat them, am I right? Anyway, these Cabbage Steaks with Spicy Soy Ginger Glaze are seriously delicious and only my first installment of “let’s make boring and overlooked vegetables not-so-boring after all!”

 

Ingredients

1 head cabbage
2 clove garlic
1 tbsp olive oil
3 tbsp soy sauce
½ tbsp turbinado sugar or sweetener of choice
2 tsp chili paste
2 tsp fresh ginger
1 tsp sesame oil

For garnish:

1/2 cup cashews, roasted and salted

4 green onions

2 tbsp sesame seeds

 

Directions:

  1. Preheat the oven to 400 F.
  2. Slice cabbage into 1 inch steaks.
  3. In a small bowl, whisk together garlic, olive oil, soy sauce, sugar, chili paste, ginger, and sesame oil.
  4. Line cabbage steaks onto a greased baking sheet. Drizzle the glaze over each steak.
    1. Note: steaks will be different sizes, so drizzle proportionally over each steak.
  5. Bake steaks for 25 minutes, or until tender. Garnish with sesame seeds, cashews, and sliced scallions and serve.
