Carnitas

We LOVE Chipotle..but let’s face it…we cannot afford to eat it as frequently as we would like (every single day). That’s why we recreated one of our favorite protein options: Carnitas! There are three major reasons we love this recipe:

  1. it’s delicious
  2. it’s perfect for meal prep
  3. IT’S CHEAP!

 

Ingredients:

4 lb pork shoulder/butt

2 oranges, juiced

1 tsp oregano

1/2 tsp cayenne pepper

1 TBS chili powder

1 TBS cumin

1 TBS kosher salt

2 tsp pepper

3 cloves minced garlic

1 white onion, chopped

1 jalapeno, chopped finely

 

Directions:

  1. Combine spices, onions, garlic, jalapeno and spices
  2. Place pork in Crock-Pot on high
  3. Poor sauce mixture evenly over pork
  4. Cook for 6 hours
  5. Shred and remove any large pieces of fat

If you’re feeling fancy…

Add the pork to a pan on medium-high heat and allow pork to crisp up

or

Add fresh cilantro once the pork is cooked
