Crock-Pot Shredded Chicken

We meal prep every single week. If we didn’t, our clean eating habits would likely fly out the window – we have serious compulsive behaviors when we get HANGRY. When we meal prep, our priority is to have a lean protein that we can grab and use in many different ways. Chicken is for sure a staple, but it can get seriously boring. Here is our base recipe that we use most weeks. It’s simple and flavorful, but we can use it in so many different ways.

 

Ingredients:

2 lb chicken breasts

1/2 white onion, chopped

1/2 tbs garlic, minced

1/2 Tbs pure maple syrup

2 tbs cumin

1 tsp cayenne pepper

1/2 tsp paprika

1/2 tsp tumeric

1 tsp salt

 

Directions:

  1. Add everything to a Crock-Pot and cook on high for 4 hours
  2. Shred chicken with two forks

 

If you’re feeling fancy…

Add soy sauce and veggies for a stir-fry-styled chicken

or

Add enchilada sauce (read the labels for a clean one)

or

Add your favorite fresh herbs for a burst of flavor
