Fajita Veggies

Fajita veggies are the perfect addition to your meal-prepped protein whether it’s our Carnitas recipe, simply grilled chicken or a meatless option of your choosing. I mean, your meal isn’t complete without at least 1-2 colors. Here’s one of our favorite ways to add that color:

 

Ingredients:

1 large onion

1 large red bell pepper

1 large yellow bell pepper

1 jalapeno

Marinade:

1 lime, juiced

1 tbs olive oil

1 tsp chili powder

1 tsp cumin

1/2 tsp red pepper

1 tsp garlic powder

salt & pepper to taste

optional: hot sauce

 

Directions:

  1. Slice veggies into long strips or chop, whichever you prefer
  2. Mix together ingredients of marinade
  3. Toss veggies in marinade and allow to soak in the flavors for at least 20 minutes
  4. Grill, sautee or steam veggies until tender (4-5 minutes)

Skewer the veggies and throw them on the grill
