Try this Cauli Mash to replace traditional mashed potatoes that are usually loaded with cream and butter. Here’s what you’ll need:

1 medium head cauliflower

3 green onions

3 cloves garlic

1/2 cup vegetable broth

1 tsp sea salt

1/2 tsp black pepper

1/4 cup plain non-fat Greek yogurt

 

Directions:

  1. Steam cauliflower with garlic, onions, and vegetable broth in a covered microwave safe bowl for 8-10 minutes, or until soft
  2. Add remaining seasoning and yogurt
  3. Blend in food processor or blender until smooth
