Looking for a new way to celebrate Cinco de Mayo? How about a short stack of Protein Churro Pancakes? These sweet potato-based protein pancakes are filled with protein and healthy carbs, so they’re great for a post workout meal.
Here’s what you’ll need:
1 scoop protein powder
1/2 medium sweet potato, cooked and mashed
1/3 cup whole wheat flour
1 packet of stevia
1 egg
1/4 cup of almond milk
Coconut oil for pan-frying
Directions:
- Combine wet ingredients (be sure to wait until the sweet potato has cooled, so you don’t end up with scrambled eggs!)
- Add in protein powder and stevia
- Slowly add in flour until batter reaches desired consistency
- Pan fry on medium heat for 2-3 minutes per side
