Looking for a new way to celebrate Cinco de Mayo? How about a short stack of Protein Churro Pancakes? These sweet potato-based protein pancakes are filled with protein and healthy carbs, so they’re great for a post workout meal.

Here’s what you’ll need:

1 scoop protein powder
1/2 medium sweet potato, cooked and mashed
1/3 cup whole wheat flour
1 packet of stevia
1 egg
1/4 cup of almond milk
Coconut oil for pan-frying

 

Directions:

  1. Combine wet ingredients (be sure to wait until the sweet potato has cooled, so you don’t end up with scrambled eggs!)
  2. Add in protein powder and stevia
  3. Slowly add in flour until batter reaches desired consistency
  4. Pan fry on medium heat for 2-3 minutes per side
