During this time of year, you can pretty much guarantee we are putting pumpkin pie spice and pumpkin puree in just about everything, and that’s how we came up with this Pumpkin Pie Protein Pudding. Grab this fall-inspired treat the next time you’re struggling with a major sweet tooth. Indulge in this rich and creamy pudding without all of the guilt and self-loathing that usually follows shortly after the sugar high wears off. We created this recipe with a tofu base for an added protein boost with every bite. So this treat not only satisfies your cravings, but it will also keep you satisfied longer.

 

Here’s what you’ll need:

15 oz can pumpkin puree
24 oz organic soft tofu
1/3 cup maple syrup
1 tsp stevia
1 tsp vanilla extract
1 tsp pumpkin pie spice (2 part cinnamon, 1 part ginger, 1 part nutmeg)

 

Directions:

  1. Blend ingredients together until smooth
