I have recently been incorporating more plant-based meals into my lifestyle. I do this by going completely vegetarian, sometimes vegan, at least one day per week and limiting any meat consumption to one meal per day on the days I do eat meat. This has inspired me to be a little more creative with my meals (no more chicken, rice, and veggies for meal prep!). These Curry Veggie Burgers are my most recent experiment!
Here’s what you’ll need…
1 can garbanzo beans
1 medium sweet potato, cooked and skin removed (simply bake in the microwave until soft)
1/4 cup red onion, diced
1 clove minced garlic
1 Tbs curry powder
1/2 tsp Garam masala
1/4 tsp cayenne pepper (optional)
Directions:
- Preheat oven to 375F
- Mash all ingredients together
- Form into four patties
- Bake on baking sheet lined with parchment paper for 25 minutes

Enjoy on a lettuce wrap or bed of rice

Add a fried egg or scramble with eggs for added protein (also, I am just obsessed with eggs… I know I’m not the only one!)
