Late night snacking is my worst enemy. I can have a perfectly normal day of clean eating and feeling satisfied, but once the evening rolls around, and I am relaxing from the day, my willpower and cravings kick in HARD! My best trick to combat this is by keeping junk out of the house entirely. I know myself well enough to say that I am not just going to have one serving of whatever snack I have laying around. One thing I can do though is create a recipe for a snack that I won’t feel bad about eating in my weaker moments. These Coconut Macaroons are it. Their bite-sized sweetness is exactly what my cravings are calling for! Plus, they are made up FIVE ingredients that I know I will have on hand 90% of the time.

 

Here’s what you’ll need…

7oz unsweetened coconut (shredded will be easier to manage than large flakes)

3/4 cup canned coconut milk (full fat)

2 large egg whites

3 Tbs pure maple syrup

1/4 cup dark chocolate chips

 

Directions:

  1. Preheat oven to 325F
  2. Beat egg whites until soft peaks form
  3. In a separate bowl, combine coconut flakes, coconut milk, and maple syrup
  4. Gently fold egg whites  into mixture
  5. Form into balls with a heaping tablespoon and drop onto baking sheet lined with parchment paper
  6. Bake for 25 minutes
  7. Melt chocolate chips in a double boiler or in the microwave
  8. Drizzle or dip the macaroons with the dark chocolate chips
