We LOVE eggnog. Like seriously, we can pass up the sugar cookies, the hot chocolate and all that jazz, but eggnog is a weakness. That’s why we created this healthified, lightened up eggnog. Not only is this Holiday Eggnog clean-eating-approved, but it also has nearly 13 grams of protein in each serving! You could practically drink it as your post-workout shake.

 

Here’s what you’ll need:

4 eggs (separated)
3 cups skim milk
1/4 cup stevia +1 Tbs
1 Tbs maple syrup
pinch of nutmeg

 

Directions:

  1. Beat yolks together until lemon-colored
  2. Slowly add in 1/4 cup of stevia and maple syrup and mix until stevia is dissolved
  3. Bring milk to a boil and cool slightly
  4. Slowly add warm milk to yolk mixture
  5. Add nutmeg
  6. Return mixture to heat and heat to 160F (to kill off any potentially harmful bacteria)
  7. Chill milk and egg mixture
  8. Beat whites to soft peaks
  9. Add 1 Tbs of stevia and continue beating to stiff peaks
  10. Whisk whites and chilled mixture together
  11. Top off with a pinch of nutmeg, and enjoy!
