Mother’s Day is less than two days away, people! What on earth could we possibly do to honor and express our endless gratitude for the woman who we literally owe our lives to?! Well, we can start by making a recipe in her honor, of course! Our mom loves Key Lime Pie, so we whipped up these healthy Key Lime Pie Bars that are almost as sweet as she is ?

 

Here’s what you’ll need:

Crust:

1 1/2 cup coconut flour
5 Tbs coconut oil
4 large eggs

Filling:

1 cup skim milk
1/3 cup honey
3 eggs
1 packet of gelatine
Juice of 2 limes
zest of 1 lime

 

Directions:

  1. Preheat oven to 350 F
  2. Combine crust ingredients and press into 9×13 dish
  3. Bake crust for 20 minutes
  4.  Combine all filling ingredients, except gelatine in saucepan
  5. Heat mixture, stirring continuously to avoid scrambled eggs
  6. Once milk mixture is heated, slowly stir in gelatine and stir continuously until it is fully dissolved
  7. Pour over crust
  8. Return to bake for about 20 minutes
