We grew up in rural Minnesota with a dad that has a passion for hunting. Every fall we get to enjoy loads of wild game filled with protein and unique flavors. This recipe is
sure to deliver tender goose without the gamey flavors you would expect. If you don’t have wild goose, you can replace with the protein of your choice.

 

Here’s what you’ll need:

2 wild goose breasts
1 medium head of brocolli
2 cups shredded carrots
3 green onions
1/2 white onion
1 T olive oil

Goose Marinade

1 tsp garlic
1 tsp kosher salt
1 T tamari
1 tsp sesame oil
1/2 orange juiced
1/4 tsp red pepper flakes
1/2 tsp minced ginger

Veggie Marinade

3 T tamari
2 T brown rice vinegar
1/2 tsp red pepper flakes
1/2 tsp minced ginger
1/4 tsp orange zest
1/2 tsp garlic
1/2 tsp stevia

 

Directions:

  1. Submerge skinless goose breasts in water with 1/2 Tbs Kosher salt overnight
  2. Slice the goose breasts thinly, trimming off the fat
  3. Combine ingredients of goose marinade and let the breasts marinade for about an hour
  4. Place enough olive oil in a hot frying pan to coat the bottom of the pan
  5. Toss the chopped broccoli, carrots, and onions in the hot pan and pour the veggie marinade over the top
  6. Cook for about 5 minutes, or until veggies reach desired tenderness
  7. Remove veggies from heat
  8. Stir in marinaded goose and cook until evenly browned
  9. Combine veggies and goose and enjoy over a bed of brown rice or lettuce.
