Here’s what you’ll need:

1 cup pumpkin puree
1 cup canned coconut milk, full fat
3 Tbs maple syrup
1 tsp cinnamon
2 tsp pumpkin pie spice

 

Directions:

  1. Mix ingredients together
  2. If you have an ice cream maker, use is instructed. For those of you without an ice cream maker: place mixture in your freezer and wisk the mixture together every 30 minutes for about 3 hours. I broke mine up into 9 portions with the following macronutrients: 109 Calories, 5.5g fat, 14.5g carb, 0.7g protein
