I love a good pasta salad. To me, a good pasta salad means a tender pasta, a light and fresh dressing, and lots of mix-ins. This Summer Pasta Salad is my favorite combination because is so loaded with protein, made with only fresh and simple ingredients, and perfectly balanced with bright flavors.
Here’s what you’ll need
Salad
8 oz chickpea pasta shells
1 lb cooked and cubed chicken breast
1/2 cup dried cranberries
1 cup crumbled feta
1 cup spinach, chopped
Dressing
1/4 cup lemon juice
1/3 cup olive oil
1 tsp salt
1 Tbs honey
Directions
- Cook pasta shells according to package directions
- Stir together salad ingredients
- In a blender bottle or mason jar, combine dressing ingredients and shake it up
- Drizzle over the top and stir
Notes
Add slivered almonds or chopped pecans for a boost of healthy fats and a satisfying crunch to finish off this Summer Pasta Salad.
