These Sweet Potato Fritters are perfect for your weekend brunch or meal prepped breakfast!
Sweet potatoes are my favorite addition to any breakfast, but to mix up my standard hash or pan-fried cubes, Sweet Potato Fritters are my go-to. When I was younger, my mom used to make fritters on the weekends, and they would fill the house with warm aromas of different herbs and spices. These sweet potato fritters are inspired by those mornings.

Here’s what you’ll need:

2 large sweet potatoes, shredded 1 large yellow onion, diced 2 stalks of celery, diced 1/4 cup fresh dill, chopped 1/2 cup whole wheat flour 4 large eggs 1/2 cup egg whites Salt and pepper to taste  

Directions:

  1. Preheat pan or cast-iron skillet to medium heat
  2. Combine all ingredients into a large bowl and mix
  3. Scoop 1/4 cup of mixture and form into flat patties
  4. Pan-fry in greased skillet for 3-4 minutes per side, or until golden crisp forms
  5. Serve hot! and enjoy!
