We’ve said it before, and we will say it again – WE LOVE SWEET POTATOES. Most weekends, we like to try elaborate brunch recipes. Sometimes we end up with a mess, but sometimes we end up with a new recipe for you guys! These Sweet Potato Fritters a a home-run in our book, so you may even want to double this recipe!

 

Here’s what you’ll need:

1 medium sweet potato grated
2 eggs
2 green onions
1/2 green pepper chopped
1/2 jalapeño finely diced
1 tsp cumin
1 tsp corriander
1/2 tsp garlic powder
Salt and pepper

 

Directions:

  1. Combine ingredients
  2. Patty into three cakes
  3. Fry ’em up in a greased pan on medium heat for about 3 minutes per side – or until golden brown
