Some nights I head into the kitchen with no plan and no direction. The night I came up with this Teriyaki Glazed Salmon recipe was one of those nights. It was a gloomy Monday evening and the refrigerator was nearly empty other than one lone slab of wild caught salmon… okay, okay, it wasn’t that dramatic, but I did have this beautiful piece of salmon that I needed to cook up ASAP.
I threw together something quick using what I had, and it was delicious. I don’t share every recipe I make, and that’s because they aren’t all worth sharing. I test, I improve, and I test again until I come up with something that is worth sharing. Most of my weeknight dinners are not worth sharing, and 99% of the time I have no intention on sharing it. This is for a multitude of reason:
- I’m boring. A lot of my weeknight dinners are the same because I often meal prep
- I get home late, so I don’t want to spend the time it takes to properly develop a recipe along with staging and photography. To be honest, I usually just want to snuggle my dog and have a relaxing evening
- I AM HUNGRY! When I get home from work and my workout, I am usually super hungry and want something FAST.
My recipe creation process is…well… a process. This Teriyaki Glazed Salmon was different, and let me just say this: there were no leftovers.
Here’s what you’ll need:
Protein
18 oz wild caught salmon, you can swap this protein for your personal preference as well
Glaze
1/4 cup olive oil
1/4 cup soy sauce
2 Tbs raw honey
1/4 tsp red pepper flakes
1/3 cup Veracha
Directions:
- Preheat cast iron skillet over medium heat
- Place salmon, skin side down onto cast iron
- Whisk together glaze ingredients and pour over the top
- Cover salmon and allow to cook for 6-8 minutes, spooning the glaze over the salmon every few minutes
- Salmon is done when the flesh becomes flakey, you can test this with a fork
