I have been on a major MAJOR tropical fruit kick. I can’t help myself – summer fever is hitting hard. This Tropical Pineapple Glaze is exactly what I need to keep this summer fever alive despite the fact that it has been rainy and cold here in MN all week long. Seriously, where is the sunshine and warm weather?! Do I talk about weather enough? Anyway, I threw this glaze in with this week’s meal prepped chicken, and let me just say, it was fantastic. I had tropical island vibes to keep my spirits up throughout this dreary week.

 

Here’s what you’ll need:

2 cup diced pineapple

1/3 cup low-sodium soy sauce

1/2 tsp red pepper flakes

3 cloves garlic

1 tsp ground ginger

 

Directions:

  1. Combine ingredients in small saucepan over medium heat
  2. Allow pineapple to soften
  3. Blend ingredients in food processor until smooth
