We created this Radish Leaf Walnut Pesto for two reasons:

1. We absolutely love pesto.
2. We abosolutely hate food waste. Hate it.

We always reach for new seasonal produce when we find it, and we’ve been totally digging fresh, crisp radishes lately! However, we couldn’t stand throwing away all of the beautiful greens that go along with them, so we came up with this recipe as a solution – and it’s so yummy.

Here’s what you’ll need:

1 cup radish greens
1 cup basil
1/3 cup walnuts
1/3 cup olive oil
1/4 cup parmesan
3 tsp minced garlic
1/4 tsp salt

Directions:

  1. Blend all ingredients in food processor until smooth

If you’re feeling fancy…

Toss in some pine nuts instead of walnuts

or

Add beet greens, carrot greens, or any other leftover greens you may find leftover from root veggies

or

Toss in some kale for some added micronutrients
