Here’s what you’ll need:
3 T olive oil
1 T fresh minced ginger
1 tsp ground turmeric
1 Chopped jalapeño pepper
1 T black or yellow mustard seed
Salt to taste
2 cups slice potatoes
Directions:
- Preheat oven to 425F
- Mix first six ingredients together
- Toss with potatoes until coated
- Roast in a glass baking dish for 20 minutes
