Berries and cobbler make for a fantastic summer dessert! Plus, just about anything that comes out of a cast iron skillet is delicious. If you’re looking for a gluten free or paleo summer dessert, this Berry Skillet Cobbler is for sure a winner.
Here’s what you’ll need:
Filling
2 cup blueberries
1 1/2 cup strawberries
1 tsp tapioca flour
1 tbs honey
Cobbler
1/2 cup butter or coconut oil, melted
1/4 cup raw honey
1 cup rolled oats
1/3 cup tapioca flour
1 cup almond flour
Directions:
- Preheat oven to 350F
- Combine filling ingredients
- In a separate bowl, combine cobbler ingredients
- Add filling to a large cast iron skillet and top with cobbler mixture
- Bake for 35-40 minutes, or until cobbler turns golden
If you’re feeling fancy…
Switch out the berries for your choice of seasonal fruit
or
Add some crushed walnuts or pecans for an added crunch
or
Top it off with some “nice” cream or coconut whip (or ice cream… we won’t tell!)
