Fajita Veggies
Fajita veggies are the perfect addition to your meal-prepped protein whether it’s our Carnitas recipe, simply grilled chicken or a meatless option of your choosing. I mean, your meal isn’t complete without at least 1-2 colors. Here’s one of our favorite ways to add that color:
Ingredients:
1 large onion
1 large red bell pepper
1 large yellow bell pepper
1 jalapeno
Marinade:
1 lime, juiced
1 tbs olive oil
1 tsp chili powder
1 tsp cumin
1/2 tsp red pepper
1 tsp garlic powder
salt & pepper to taste
optional: hot sauce
Directions:
- Slice veggies into long strips or chop, whichever you prefer
- Mix together ingredients of marinade
- Toss veggies in marinade and allow to soak in the flavors for at least 20 minutes
- Grill, sautee or steam veggies until tender (4-5 minutes)
