We LOVE eggnog. Like seriously, we can pass up the sugar cookies, the hot chocolate and all that jazz, but eggnog is a weakness. That’s why we created this healthified, lightened up eggnog. Not only is this Holiday Eggnog clean-eating-approved, but it also has nearly 13 grams of protein in each serving! You could practically drink it as your post-workout shake.
Here’s what you’ll need:
4 eggs (separated)
3 cups skim milk
1/4 cup stevia +1 Tbs
1 Tbs maple syrup
pinch of nutmeg
Directions:
- Beat yolks together until lemon-colored
- Slowly add in 1/4 cup of stevia and maple syrup and mix until stevia is dissolved
- Bring milk to a boil and cool slightly
- Slowly add warm milk to yolk mixture
- Add nutmeg
- Return mixture to heat and heat to 160F (to kill off any potentially harmful bacteria)
- Chill milk and egg mixture
- Beat whites to soft peaks
- Add 1 Tbs of stevia and continue beating to stiff peaks
- Whisk whites and chilled mixture together
- Top off with a pinch of nutmeg, and enjoy!
