A classic comfort food of ours is a big bowl of spaghetti and meatballs. That’s why we cleaned up the classic – so we could indulge guilt free. This recipe yields about 24 meatballs, so you’ll have plenty to feed the whole family or for your weekend meal prep.

 

Ingredients:

1 lb lean ground beef
1 lb lean ground pork
1 cup rolled oats (blended into a flour)
1/2 cup chopped yellow onion
2 eggs
1 tsp oregano
1 tsp thyme
1 tsp kosher salt (sea salt or hymalayan also work)
1/2 tsp cayenne pepper
4 cloves of garlic
2 Tbs fresh basil
2 Tbs fresh parsley

 

Directions:

  1. Combine all ingredients and form meat into desired sized meatballs
  2. Brown up the outsides on a skillet on medium heat
  3. Let simmer in our spaghetti sauce or sauce of choice in the Crock-Pot for 5 hours on low
  4. Enjoy on a bed of zucchini noodles, spaghetti squash, quinoa or pasta of your choice!
